Sweet & Spicy Pan Fried Dumpling aka Gyoza 韩式甜辣酱煎饺子



Sweet and spicy, slippery and slick, these pan fried dumplings aka gyoza are so appetising and delicious. Both freshly made and frozen gyoza can be used in this recipe. Simple, need no dipping sauce for this. ;)

If you have no time to make gyoza from scratch,
 this CP brand frozen gyoza is a good alternative. 


1 heap tsp Grated Ginger

1 heap tsp Grated Garlic

Pinch of Toasted Sesame Seeds 

1/4 tsp Chopped Spring Onion

Some oil for cooking 


Sweet & Spicy Sauce: 

1/2 tsp Sesame Oil

1 tbsp Gochuchang Sauce

1 tbsp Chili Sauce

1/4 tsp Soy Sauce

1/2 tsp Sugar

1/2 tbsp Mirin

Dash of Chili Powder

1 tbsp Water

(add all sauce ingredients in a bowl, mix well and set aside)

Method: 

1. Cook gyoza following the steps in this link >> >> Click here for Homemade Gyoza Recipe >>  . Note: Do not add Teriyaki sauce.



2. Remove the gyoza from skillet, set aside. Heat some oil in the same skillet, add in grated ginger and garlic, fry till fragrant. 





3. Stir in sauce, bring to a boil and turn to low heat. 




4. Add in the cooked gyoza, stir to coat. When the sauce is thicken, remove from heat. Garnish with toasted sesame seeds and spring onion. Serve right away.

Rilakkuma On Hamburger Happy Meal Toy 拉拉熊快乐餐




Rice Based Food Art - Rilakkuma On Hamburger Happy Meal Toy 拉拉熊快乐餐. Made of cooked rice added some pumpkin and soy sauce for the colour, healthy and adorable kids meal. 

Rilakkuma On Hamburger was the McDonald's free toy with any Happy Meal purchase. I have missed this toy as I wasn't aware of the promotion. I only managed to get the other three. To "complete" the set, I have made this toy with rice, take a picture and archived. :P 




Back in March 2018, McDonald's released a set of super adorable Rilakkuma toys:


  • Rilakkuma on Hamburger
  • Rilakkuma & Hamburger
  • Korilakkuma & Drinks 
  • Kiiroitori on Happy Meal Box

I loved them all but too bad I was not aware of the promotion and when I finally visited McDonald's on one of the weekend, I have missed the first one - Rilakkuma On Hamburger. 

I have 1 Kiiroitori on Happy Meal Box and 1 Rilakkuma & Hamburger extra, all new and sealed. If anyone have Rilakkuma On Hamburger extra and keen to trade the toy, kindly contact Miki's Food Archives via pm. I'm not interested to buy, so if you're a seller, please do not contact me. How I made it:

1. Portion out the cooked rice, 2/3 of the rice mix with steamed pumpkin. Place a cling wrap on a bowl, add in rice and wrap up. Gently press to shape the rice into semicircle. Remove the rice from cling wrap, transfer onto serving plate. Set aside.




2. Scoop out 1 tsp of plain rice, cover with cling wrap and flatten. Set aside.

3. Add some soy sauce/ dark soy sauce to the remaining rice, mix well. Use cling wrap to shape the Rilakkuma head, body, arms and ears. 






4. To serve: Place the Rilakkuma on the pumpkin rice. Cut and place the plain rice on the face and tummy. Add facial details using seaweed and cheese. Serve with lemon-pepper spiced salmon, seaweed egg roll and vegetables to complete the meal.

Salted Egg Yolk Crab Meat Linguine 咸蛋黄蟹肉意面



A truly Asian flavour linguine with homemade salted egg yolk sauce that is creamy, rich and full of flavour. Teaming it with fresh crab meat, it taste fantastic! So delicious...











Ingredients:

Yield 1 serving

80g Linguine or any pasta of your choice

80g Crab Meat

2 Salted Egg Yolk

2 cloves Garlic, chopped/ sliced

100ml Cooking Cream

120 ml Chicken Broth

1 tbsp All Purpose Flour

20g butter

Some Olive Oil for cooking

Some Pepper and Salt, add to taste

Method:

1. Steamed salted egg yolk for 15 minutes. Mashed and set aside.


I used San Remo Linguine in this recipe.


2. Cook linguine according to the package instruction. Set aside.


Raw crab meat.


The crab meat turned white when it's cooked.

3. In a skillet, heat some olive oil, add in garlic, fry until fragrant. Add in crab meat, season with pepper and salt, when it's about to cook through, stir in 5g butter.






4. When the crab meat turned white, it's fully cooked, remove from heat. Set aside.








4. In the same skillet, add in 15g butter, stir in salted egg, mix well.




5. When the salted egg mixture started to bubble, add in flour, stir to mix well.





6. Add in cooking cream and chicken broth, bring to a boil.






7. Season with salt and pepper, add in cooked linguine and crab meat. 




8. Stir to mix well, when the sauce is thicken, remove from heat and serve warm.

Rilakkuma & Kiiroitori Onigiri aka Rice Ball 拉拉熊小鸡饭团




Rice Based Rilakkuma & Kiiroitori Theme Food Art - These adorable Rilakkuma and Kiiroitori onigiri are made of rice. Yellow Kiitoitori is made of pumpkin rice filled with furikake, brown Rilakkuma rice is seasoned with soy sauce and ground sesame seeds. 

Pairing these kawaii rice with stir fry vegetables & scallops and salmon tempura to complete a cute, nutritious and delicious hearty meal that children would definitely love! 





How I made it:

1. Portion out some rice, mix with cooked pumpkin. Flatten the rice and add furikake of your choice. Cover with cling wrap and shape into Kiiroitori. 

Rilakkuma onigiri: Mix the rice with some soy sauce/ dark soy sauce and ground sesame seeds. Shape into ball, add a small portion of plain rice on top, cover with cling wrap and shape into bear head. Make another 2 small round balls to make the ears. 






I made 2 arms at first, but the boy was too hungry and gobbled up the arms. :D

3. Prepare Salmon Tempura, a quick and easy method:

- Season salmon fillet with garlic salt, pepper and corn flour, let marinate for 15 minutes.

- Mix tempura flour with cold water, dip and coat the salmon, can be deep fried or pan fried. 






4. To serve: 

- Prepare 2 clean bowl, one for salmon tempura, the other for vegetables.





- Place the Rilakkuma onigiri with the salmon tempura. Add facial details using seaweed and cheese, as shown in the picture.

- Place Kiiroitori onigiri on the vegetables. Add facial details using seaweed and carrot, as shown in the picture.

Homemade Carrot Noodles (eggless recipe) 胡萝卜手工面条



This is my simple recipe making delicious and nutritious noodles from scratch, without noodle machine, no artificial colouring and flavouring. For some reason, people tends to think making noodles from scratch is difficult, but it's actually simpler than you think. 




These noodles are soft and springy, cook quickly and keep very well in the refrigerator. I have added a superfood in these noodles - Carrot. 

The health benefits of carrots include:


  • Reduced cholesterol
  • Lower risk of heart attack
  • Improve vision
  • Reduced signs of premature aging
  • Prevention of certain cancers
  • Boost immune system
  • Improve digestion
  • Protect cardiovascular health
  • Detoxify the body, etc...
... they also provide a well-rounded influx of vitamins and minerals.


I don't have a noodle machine at home, so I use a sharp knife to cut the dough into thin strips.
Knife - Tramontina Utility Knife




这食谱不用面条机,做出来的面条Q弹,口感非常好。加了营养丰富的胡萝卜汁,带点甜味,大人小朋友都会喜欢。

Ingredients:
材料

1 medium size Carrot 胡萝卜 1 条

140g Water 水 140克

250g Plain Flour 中筋面粉 250克

1 tsp Salt 盐 1 小匙

Method: 步骤

1. Peel and cut carrot into chunks.
胡萝卜去皮,切块。




2. Blend carrot with water, pour the juice through a sieve. Reserve the juice.
胡萝卜加水,打汁,过滤。





3. Add carrot juice, flour and salt into a mixing bowl. Knead for 15 minutes.
将胡萝卜汁,面粉和盐搅拌/揉成面团,大概15分钟。





4. Transfer the dough onto a floured worktop.
把面团放在撒了粉的桌上。




5. Cut out about 1/5 of the dough, use cling wrap to cover the remaining dough. 
分割大概五分一的部分,其余的面团先用保鲜纸包好。





6. Roll out the dough, cut into thin strips. Refer pictures. If you have a noodle machine, you can use it to process the noodles.
把面团擀薄,用刀切成面条。家里有面条机的话,可以用。







7. Repeat step 5 and 6 to finish up the remaining dough. 
重复步骤 5 和 6 至用完面团。



8. To serve: Cook the noodles in hot boiling water, stir constantly. 
煮面条:把适量的水煮滚/烧开,加入面条,用筷子迅速搅拌。

9. These noodles cooked quickly (less than a minute). Rinse noodles, drain and serve with your choice of dressing.
